Quick and Easy Taco Bar for Super Bowl




Chicken Taco Filling


Ingredients: 2 cups shredded chicken 

1 tablespoon canola oil

½ cup diced yellow onion

2 tablespoons home-made salsa (you can also use your favorite store bought)

1 ½ teaspoons taco seasoning ( I used a Trader Joe’s brand)

¼ cup water


Directions: Heat oil in a large skillet and add onions.  Cook until translucent, about 3 minutes.  Now add shredded chicken, salsa, taco seasoning and water.  Continue cooking for another 5 minutes.  Set aside and keep warm.  


Ground Beef Filling


Ingredients: 1 lb. ground beef (I used 90/10)

1 tablespoon canola oil

2 cups rice/quinoa mix (I cooked this a couple of days before, so had leftovers.  You can also use frozen hash browns.  I often use them as to expand the taco mix)

2 teaspoons taco seasoning 


Directions: Heat oil in a large skillet and cook until browned.  Add rice/quinoa (you can also just use rice here) mix and cook until completely combined.  Now add taco seasoning and continue cooking for 5 minutes.  You can add more or less taco seasoning depending on your taste preference.  


Quick and Easy Spanish Rice



Ingredients: 2 cups cooked rice (I used leftover rice)

2 tablespoons canola oil

½ of a green bell pepper diced fine

½ of a yellow onion diced fine

1 can tomato sauce

2 tablespoons salsa

½ teaspoon granulated garlic

½ teaspoon salt


Directions: Heat oil in a large skillet and add onions and green pepper.  Cook for about 3 minutes, until they soften slightly.  Now add tomato sauce and salsa until completely combined.  Add cooked rice along with salt and granulated garlic.  Stir until all the flavors come together and the rice is fully coated with tomato mixture.  




Quick and Easy Spicy Pinto Beans


Ingredients: 

1 15 oz. can of pinto beans with juice

2 tablespoons salsa


Directions: 

Heat pinto beans in a medium saucepan along with the salsa.  Cook until beans thicken, about 10-15 minutes.  


Condiments to Include in taco Bar


Good quality taco shells (I used blue corn and yellow corn)

Guacamole

Greek yogurt/sour cream

Shredded Mexican blend cheese

Homemade salsa, or store bought of your choice

Tomatillo salsa

Shredded lettuce

Diced tomatoes
