Chicken Taquitos
Ingredients:
2 cooked chicken breasts shredded, or chopped fine (I used a rotisserie chicken)
12 corn tortillas
Spray canola oil
Tomatillo salsa (recipe below)
Tomatillo Salsa:
5-6 tomatillos
2 jalapenos
½ of a medium yellow onion
¼-cup cilantro leaves
1 garlic clove
Juice of ½ of a lime
1-teaspoon salt
1 avocado
Directions:
1. Boil tomatillos for 5 minutes. Once cooled, add tomatillos, jalapenos, onion, cilantro, garlic, lime, salt, and avocado to a chopper, or blender. Combine until very smooth, and set aside.
2. Chop or shred two cooked chicken breasts (I used a rotisserie chicken it is a great hack!).
3. Put shredded/chopped chicken into a skillet along with ½ cup of tomatillo salsa, and combine until just warmed. Set aside.
4. Heat a skillet on medium high and spray with canola oil. Add one corn tortilla at a time and cook slightly, just until pliable. Put onto a plate with paper towels.
5. Preheat air fryer on 300, for ten minutes.
6. Roll each corn tortilla with a tablespoon (or more) of chicken mixture, and set onto a plate, seam side down.
7. Transfer rolled corn tortillas to the air fryer, seam side down, and cook for 20 minutes (I turned them over halfway through the cooking process, so they would cook evenly.
8. Transfer cooked taquitos to a plate and enjoy with tomatillo salsa!

Try this recipe using ground beef, shredded beef, sweet potatoes, calabacitas...the possibilities are
endless! I used a tomatillo salsa, but they also go great with guacamole and regular salsa as well.

I used the air fryer to cook the taquitos because I think they are too heavy when you deep fry them.
You could easily cook them in the oven in the same manner.
