Green Chile Stew - Vegan/Vegetarian Option
Ingredients:
1 can jackfruit/ or 12 oz frozen
1 cup chopped green chile
1 cup chopped can tomatoes
¼ diced onion
1 clove garlic, pressed
4 red potatoes diced into 1 inch cubes
3 carrots diced
1 medium zucchini diced into 1 inch cubes
4 cups vegetable broth
1 tablespoon vegetable oil
1 ½ teaspoon salt
cornstarch swirlie (1 tablespoon cornstarch & ¼ cup water)
Directions:
Heat vegetable oil in a medium to large pan. Add onion and cook for about 2 minutes then add garlic and cook until fragrant. Next add jackfruit and cook for 5 minutes. Mix in potatoes, carrots, tomatoes, green chile and broth. Bring up to a boil. Once boiling add salt, cover and cook until potatoes have softened and you can stick a fork through them. Now add the zucchini and cornstarch swirlie and cook for an additional 5 minutes. The broth will thicken. It is ready to serve. You can meal prep the stew for the week, or freezed it for up to a month. Enjoy!
