Quesa Birria Tacos


Today we are making some Queso Birria Tacos! If you have ever had these delicious tacos at a Mexican restaurant you know that there is a lot of love and patience put into this dish. Quesa Birria Tacos 


Ingredients: 


1 tsp oil

1 cup prepared birria

6 - 8 corn tortillas 

Shredded cheddar or queso blanco (mozzarella) 

Consume (the broth and fat from the birria meat) 


Garnish: chopped white onion and cilantro, lime and crushed red pepper. 


Directions: 


Heat 1 tsp oil on a medium skillet on medium to high heat. Dip a corn tortilla in the broth and place it in the hot skillet. Let it cook for about a minute before adding about 2 tbsp birria meat on one side and top it off with about 2 tbsp of cheese. Let the cheese melt slightly before folding the tortilla in half to make a taco. Grill both sides until nice and crisp, this should take about five minutes. Repeat this process with the rest of the tacos. Serve each plate with a side of the consume (birria broth) and garnish.
