 Low Carb Spanish Rice - Cauliflower Rice


Ingredients: 


1 10oz bag of frozen cauliflower rice

1-2 tablespoons of canola oil or vegetable oil

¼ cup of yellow onion, diced

¼ cup of green bell pepper, diced

1 heaping tablespoon of tomato paste

¼ teaspoon of garlic powder

½ teaspoon of salt, more if needed

1/4 teaspoon of black pepper

½ cup of water


Directions: 


Heat a large skillet on medium high and add the oil. Add onions and bell pepper and saute for about 2 minutes, now add defrosted and drained cauliflower rice and stir continually. Cook for another 2 minutes. Now add tomato paste and stir until it completely covers the rice. Add the garlic powder, salt and water. Bring up to a boil and continue stirring. Once all the water is absorbed the rice is done. You can cover the rice for another 5 minutes to let all the flavors combine. Enjoy!
