Grilled Corn & Black Bean Salad
Grilled Black Bean & Corn Salad
Ingredients:
1 15oz can of black beans rinsed
2 ears of corn, grilled and kernels removed
1/2 of a red onion, diced
1 red bell pepper, diced
1 jalapeno, diced and deseeded
1/4 cup chopped cilantro
the juice of a lime
1/4 cup olive oil
1 teaspoon Chile lime salt (I use Trader Joe's brand)
Directions:
Rinse and drain black beans and set aside. Grill corn on an outdoor grill or stove top grill, char all sides. Once cooked, set aside too cool. Chop bell pepper, jalapeño, and onion. Remove the kernels from the ears of corn by placing it in a bowl so that it catches the kernels. Next add the rest of the ingredients along with the juice of the lime, olive oil and Chile lime salt. Mix and serve immediately, or you can refrigerate and serve it up later. Enjoy!
