New Mexican Spiced Chicken Fried Rice - Cauliflower Rice
Hello fellow chile lovers! Today we have created some delicious fusion by using some very simple ingredients in this spicy chicken fried rice. By taking a few short cuts you will be able to prepare this recipe and get on the table in 30 minutes! We also cut out the traditional rice and used cauliflower rice. By using cauliflower you essentially cut out most of the carbs in this recipe, so you can feel good about eating it throughout the week! New Mexican Spiced Chicken Fried Rice - Cauliflower Rice
Ingredients:
4 cups riced cauliflower
2 tbsp canola oil
¼ cup red bell pepper, diced
¼ cup celery, diced
¼ cup green onion, chopped (extra for garnish)
2 cups frozen peas and carrots
2 large eggs
3 cups cooked shredded chicken (I used a half of a rotisserie chicken)
Spicy sauce:
½ cup soy sauce
1 tbsp oyster sauce
1 tbsp sesame oil, then another ¼ tsp for egg mixture
1 tsp NM red chile powder
1 tsp ground, or fresh ginger
1 tsp ground, or fresh garlic
¼ cup rice vinegar
Directions:
Rice half of a head of cauliflower (you can also use a 15oz bag of frozen riced cauliflower). Heat a large saute pan on medium high. Add 2 tbsp canola oil along with ¼ cup diced red bell pepper and ¼ cup diced celery. Cook for about 5 minutes. Next add ¼ cup chopped green onion and cook for another 2 minutes. Now add 2 cups of frozen peas and carrots and cook for an additional 2 minutes. Add 4 cups of the riced cauliflower and cook for another 5 minutes. Now
