Salmon Patties for Lent
Ingredients:
2 - 6 oz. salmon filets uncooked
1-cup panko bread crumbs
½-cup chickpea flour
1-teaspoon NM red chile powder
2 green onions sliced
¼ cup diced green bell pepper
1 large egg
2 tablespoons lemon juice
Zest of one lemon
1 teaspoon dried dill
¼-teaspoon salt
¼-teaspoon black pepper
Directions:
Bring one cup of water to a low boil in a medium sized saucepan. Add the salmon filets and cook for about 10 minutes. The salmon will flake easily when done, let it cool down a bit before removing it from the skin. Once cooled, flake the salmon in a medium to large bowl, add all ingredients, and mix until everything is well combined and patties hold together. Form 3 inch in diameter patties, about ½ of an inch thick. This recipe should yield about 8 patties. Spray a nonstick pan with canola oil and place 3 patties at a time to cook for 2 minutes on each side, or until they are golden brown.
