PAPITAS

 

Ingredients:

2 medium to large russet potatoes

2 tablespoons canola oil

½-teaspoon salt

1/8 teaspoon onion powder

1/8 teaspoon pepper

 

Directions:

 

Peel potatoes and dice into ¼-inch cubes.  Add canola oil to a medium sauté pan and heat on medium to high heat.  Add diced potatoes, onion powder, salt and pepper.  Stir so that the oil coats all of the potatoes and cook for about 1 minute.  Now turn the heat to low, cover with a lid and cook for about two minutes.  Remove the lid and stir potatoes, then replace the lid and cook for another 2 minutes, or until potatoes are crisp and soft.
