Flautas – How to Make Chicken Flautas
Ingredients:
Flautas:
2 cups
shredded chicken (a rotisserie works great)
1 roma
tomato
½ of a white
onion
2 garlic
cloves
1-cup
chopped NM green chile
1-cup
chicken broth
1 parboiled
potato, shredded
1-teaspoon
salt
6 – 8 very
thin medium sized flour tortillas
Canola oil spray
Avocado Cream Sauce:
2 avocados
½ of a small yellow onion
1 garlic clove
½-cup mayonnaise
1 cup chopped green chile
Directions:
Roast tomato, white onion and garlic on a cast iron pan
until charred. Next you will blend
tomato, onion, garlic, green chile on medium high until very smooth. Add chile sauce to a pan and mix in the
chicken broth and salt. Cook for about
20 minutes. Meanwhile let’s prepare the
avocado sauce.
Add all ingredients for the avocado cream sauce to a
blender, and blend until creamy and smooth.
It should be the consistency of pancake batter. If it is too thick, add a little water, and
if it too thin, add a little more mayonnaise.
Set aside.
Once the chile sauce has cooked and reduced, add shredded
chicken and stir to incorporate completely.
Now add the shredded potatoes and stir to combine. Let the mixture cool completely, about 30
minutes.
To roll out the flautas, lay your tortilla on a flat surface
(I used my cutting board). Layer the
filling at the top of the tortilla and roll it out tucking the filling so it
doesn’t fall out. Put flautas seam side
down on a plate until they are all rolled out.
Transfer to the air fryer, seam side down and spray with canola
oil. Cook on 325 for 20 minutes, turning
them over halfway through.
Once done, let them cool slightly and enjoy with the avocado
cream sauce!
