Frito Pie with Ground Turkey

 

Ingredients:

½ pound ground turkey

2 tablespoons canola oil

2 tablespoons unbleached flour

3 tablespoons hot red chile powder

1 ½ cups water

2 cups of cooked pinto beans

Toppings:  cheese, shredded lettuce, diced tomato and diced onion

 

Directions:

Heat canola oil in a medium sized saucepan, add turkey and cook until slightly browned.  Add flour and cook on medium heat for about 1 minute, then add red chile powder and cook for another minute, stirring continuously.  Slowly pour in water, stirring constantly until completely combined.  Allow chile to thicken slightly, then add beans.  Cook for 15 minutes to allow the flavors to blend and the chile to thicken fully. 

Now it is time to assemble!  Put some fritos in a bowl and top with plenty of chile.  Add your toppings to include, cheese, lettuce, tomato and onion.  Enjoy!
