Stuffed Sopapillas with Beef and Chicken

Ingredients: 4 sopapillas ½ pound ground beef 1 potato parboiled 1 tablespoon canola oil (I used here because the beef was lean) 1 teaspoon salt ½ cup shredded chicken (I used a rotisserie) 1 cup cooked pinto beans (you can use leftover beans, or canned beans) ½ cup shredded cheddar cheese Green, or red chile sauce, or both! Shredded lettuce Diced tomato Diced onion Sour cream, or plain greek yogurt Directions: 1. Prepare sopapillas, and let cool slightly – https://youtu.be/2i-aBJC001s 2. Par boil one medium potato for 15 minutes. Let cool and peel. 3. In a medium skillet, brown ½ pound of ground beef. 4. Dice the potato and add to the cooked ground beef. Continue cooking until the potatoes are slightly browned and soft. 5. Shred some cooked chicken (I used a rotisserie). 6. It should open like a bun, but a bit connected. 9. Now layer in your beef and potato mixture/shredded chicken, beans, chile, cheese. 10.
