Sopa - Capirotada
Capirotada - Sopa
Ingredients:
1 loaf of day old French bread, or Texas toast
¼ cup pure cane sugar
1 cup hot water
5 oz can of sweetened condensed milk
½ - 1-cup raisins (soaked in warm water)
2 cups cheddar or longhorn cheese
1-teaspoon cinnamon
Directions:
Slice bread into 1 inch slices if using French loaf and
toast on a sheet pan in the oven. Once
toasted, butter the toast and dice into 1-inch squares. Set aside.
Put sugar into a saucepan and brown slightly, add hot water slowly and
cook until all sugar has melted. Now add
sweet milk, cinnamon and cook for about 5 minutes until all the flavors
combine. Pull off the heat and let cool
slightly. Using a bread pan, or cake
pan, layer bread squares on the bottom of the pan, then raisons and
cheese. Repeat the layers until all
ingredients are gone. Now pour syrup on
top of layers. Bake at 375 for
approximately 10 minutes, or until bread pudding is slightly browned on
top. Let cool before serving. It is delicious with whipped cream, or
vanilla ice cream.
Capirotada/Sopa is served during the lent season, but can be
enjoyed all throughout the year!
