Red Chile Alfredo

 

Ingredients:

6 tablespoons unsalted butter

1 ½ cups heavy cream

1 medium to large clove of garlic, minced

¾ - 1-cup chile carribe (depending on how hot you want it)

2 cups freshly grated parmesan cheese

 

Directions:

Prepare fettucine, or linguine pasta according to package directions.  Heat butter in a medium saucepan on medium heat.  Add garlic and cook for about a minute, you don’t want to burn the garlic!  Now add the heavy cream and cook for 5 minutes, it will reduce slightly.  Add the red chile carribe, stirring constantly until completely incorporated.  Cook for an additional five minutes to allow the flavors to get to know each other.  Turn heat to very low and gradually add the parmesan cheese until smooth and creamy.  Take off the heat and add noodles to the sauce, serve immediately.  Top with grilled shrimp, or chicken.
