Refried Beans

 

Ingredients:

1 ½ - 2 cups whole cooked pinto beans (see recipe below)

1 tablespoon bacon grease (olive oil, canola oil will work as well)

 

Frijoles Asina – Perfect New Mexican Pinto Beans

 

2 ½ cups pinto beans

2 quarts of water

1 ½ teaspoon salt

1 garlic clove, smashed

 

Meat options: 

1 Ham hock; 2 or 3 inch pieces of salt pork; 3 or 4 pork bones; 4 slices of bacon cut up into 2 inch pieces

Vegetarian option:

Whole onion cut in half with jalapeno (optional)

 

Directions: 

1.  Clean beans by taking out any rotted, or discolored beans.

2.  Rinse beans thoroughly under cold water for a few minutes (beans will have dirt on them, even if you bought from the grocery store. 

3.  Put bean into instant pot, crock-pot, or on the stove in a large pot. 

4.  Add your meat option, along with salt and crushed garlic clove. 

 

Instant pot cooking directions:  Cook for 1 hour and 30 minutes; let cool completely by venting until silver level goes down. 

Crock-pot cooking directions:  Cook on high for approximately 1 hour, or until it starts to boil.  Turn down to low, and cook for 6 to 8 hours.
