Mexican Shrimp Cocktail

Ingredients:

1 pound chilled cooked medium shrimp - peeled, deveined, and tails removed

1 english cucumber, finely chopped

 

2 avocados - peeled, pitted, and chopped 

 

½-cup fresh made salsa

 

¼-teaspoon ground dried shrimp

 

2 teaspoons salt

¼ cup freshly squeezed lime juice (about 2 limes)

2 cups chilled tomato and clam juice cocktail (such as Clamato)

½ cup chilled ketchup

1 bunch fresh cilantro - stems discarded and leaves chopped

2 tablespoons hot pepper sauce

 

Directions:

Mix all ingredients into a large bowl, taste for seasoning and spice.  Chill for at least one hour in the refrigerator.  Serve with saltine crackers.  Enjoy within 5 days.
