Huevos Rancheros
Huevos Rancheros – Swift and Easy
Recipe
4 corn
tortillas
Prepared New
Mexican red chile
4 eggs –
cooked any style
2
tablespoons corn oil
½ cup of
shredded cheddar cheese
1 cup of
pinto beans
¼ cup of
hash browns, or papitas
Garnish: shredded lettuce,
tomatoes and onions (optional)
Directions:
1. Prepare red chile
sauce and keep warm (see recipe below)
2. Heat 1-cup pinto
beans, and keep warm.
3. Fry hash browns or
papitas in a medium skillet, and keep warm.
New Mexican Red
Chile Sauce2
Tablespoons
flour

Tablespoons canola oil or vegetable oil

Tablespoons red Chile powder (link to Bueno Foods?)
1 ½ cups
water
¼-teaspoon
garlic powder or 1 clove fresh, diced finely
¼-teaspoon
salt
1/8 or pinch of dried oregano
Heat oil in medium size saucepan on medium to low heat. After about a minute, add flour and stir
constantly so it does not burn. Cook for
approximately one minute and then add red chile powder, continue stirring
constantly. The consistency will be
crumbly. After another minute, begin to
whisk in cold water slowly. Once the
sauce begins to boil, add garlic, oregano and salt. Continue cooking for 20 minutes on low
heat.
Assemble your
Huevos Rancheros:
4. Dip 2 corn
tortillas into red chile (or green chile) for 15 seconds each, and put onto a
plate, side by side.
5. Fry 2 eggs any way
you choose and put them on top of the corn tortillas (I like my eggs over
medium).
6. Top eggs with red chile
to cover completely.
7. Top chile and eggs
with cheese.
8. Add beans and hash
browns aside the eggs.
9. Microwave for 1
minute, and top with garnish of shredded lettuce and tomatoes.
