Frijoles Asina – Perfect New Mexican Pinto Beans

Ingredients:
2 quarts of water
1 ½ teaspoon salt
1 garlic clove, smashed
Meat options:
1 Ham hock; 2 or 3 inch pieces of salt pork; 3 or 4 pork
bones; 4 slices of bacon cut up into 2 inch pieces
Vegetarian option:
Whole onion cut in half with jalapeno (optional)
Directions:
1. Clean beans by
taking out any rotted, or discolored beans.
2. Rinse beans
thoroughly under cold water for a few minutes (beans will have dirt on them,
even if you bought from the grocery store.
3. Put beans into
instant pot, crock-pot, or on the stove in a large stock pot.
4. Add your meat
option, along with salt and crushed garlic clove.
Instant pot cooking directions: Cook for 1 hour and 30 minutes; let cool
completely by venting. Do not open until silver level goes down indicating it is safe to open.
Crock-pot cooking directions: Cook on high for approximately 1 hour, or
until it starts to boil. Turn down to
low, and cook for 6 to 8 hours.
Stove cooking directions:
Cook on high until beans start to boil, turn down to low and simmer for
6 to 8 hours, or until tender and pink.
